Banana bread with pecans and maple syrup

Ingredients

  • 250 gram flour
  • 1.5 grams baking powder
  • 150g (1¾ oz) creamed butter
  • 200 grams granulated sugar
  • 125 gram pecan nuts
  • 4 ripe bananas
  • 2 eggs
  • 75ml whole milk
  • 1 vanilla pod
  • 200 ml maple syrup

Preparation

  1. Heat the Grill Guru to 160°C with the Plate Setter in between.
  2. Put the flour, baking powder, butter and sugar in a bowl. Chop the pecans and add to the bowl.
  3. Mash/chop 3 bananas and mix in as well. Then add the eggs and milk. Cut the vanilla stick in half lengthways, scrape out the vanilla and add to the rest.
  4. Line a cast iron skillet with baking paper and pour in the batter, dividing evenly and slicing the remaining banana into 4 slices and pressing them into the batter.
  5. Put the banana bread on your grill and bake for about 50 minutes at 160°C.
  6. As soon as it comes off the BBQ pour the maple syrup over the banana bread.
