3 Tips to make your Grill Guru summer-proof: TIP 1. Remove the old charcoal residue from your Grill Guru and fill the firebox half with new coals. Only light the kamado in one place. If you light in several places, the temperature will rise faster, which is exactly what you want to avoid. TIP 2. Let the temperature rise as slowly as possible. This will prevent (possible) cracking and/or snapping of the ceramic. For this step, open the air slide in your base completely and leave the top cap slightly ajar. As soon as your dome thermometer reads 100 degrees, you know your kamado is firing properly. Has your BBQ reached 100 degrees? Then slide the air slide in the base closed again until it is only a quarter open. TIP 3. Try not to let the temperature rise above 150 degrees for 3 hours. You will see that the "winter moisture" will pull out of the kamado. Tip: also use your platesetter. This will make it easier to prevent the temperature from rising (too) fast. Let your charcoal burn up completely, so you can be sure that the winter moisture has been pulled out of your Grill Guru. Did mould form inside your kamado during the winter? The very first recipe we share from our latest pizza cookbook! Without dough, no pizza! Check the recipe below🔥 Preparation time 20 minutes Waiting time 2.5 hours For 4-8 pizzas: 375 ml lukewarm water 15 g salt 1½ tbsp olive oil of good quality + extra for greasing 625 g flour type '00 7 g dried yeast (1 sachet) Equipment: large bowl, spatula, mixer (optional), plastic wrap or tea towel 1. Pour the water into a large bowl (or the bowl of your mixer/kitchen machine) and add the salt and olive oil. Add the flour and yeast. 2. Mix with a spatula to form a cohesive dough. 3. Knead the dough for 10 minutes on medium speed in the food processor or by hand on a floured countertop until the dough is soft and pliable. 4. Shape the dough into a nice ball, lightly grease the bowl and dough with olive oil and cover well with plastic wrap or a clean, damp tea towel. 5. Let the dough rise for about 2 hours, until it has doubled in volume. 6. Divide the dough into four pieces (or eight for a smaller barbecue) and shape them into nice balls on a floured work surface. 7. Let the dough rise again under a damp tea towel in a warm place for another 30-45 minutes until use.
