Pizza Veggie Mediterranean

Bring a burst of colour and flavour to your BBQ with this Mediterranean-inspired veggie pizza. Topped with a mix of fresh vegetables, melted mozzarella and a crisp, airy base, this pizza is light, vibrant and perfect for sharing. A great choice for anyone looking for a fresh and flavourful vegetarian option straight from the grill.

Ingredients

1 pizza dough ball (see Basic Pizza Dough recipe)
Tomato sauce
Mozzarella
Courgette
Red bell pepper
Red onion
Olives
Olive oil
Fresh herbs (optional)

Preparation

Fire up your Grill Guru or pizza oven and preheat to 400–450°C.

Stretch the pizza dough into a thin, even base, keeping a slightly thicker edge for a nice crust. 

Spread a layer of tomato sauce over the base and top with the vegetables and mozzarella. 

Carefully transfer the pizza to the hot oven or onto a pizza stone on the BBQ and bake for a few minutes, until the crust is crisp and golden and the cheese is bubbling. 

Remove from the grill and finish with a drizzle of olive oil and fresh herbs, if using. 

Serve immediately, straight from the BBQ, while hot and full of flavour.
