Banana bread with pecans and maple syrup
Sometimes the best recipes are the ones that bring together simple, comforting ingredients. This banana bread is rich, slightly sweet, and gets an extra layer of flavour from crunchy pecans and a generous drizzle of maple syrup. Perfect as a dessert or alongside a good cup of coffee.

Preheat the Grill Guru to 160°C using indirect heat with the plate setter in place.
In a large bowl, combine flour, baking powder, butter, and sugar. Roughly chop the pecans and add them to the mixture.
Mash three of the bananas and stir them into the batter. Add the eggs and milk and mix until smooth. Slice the vanilla pod lenghtwise, scrape out the seeds, and add them to the mixture.
Line a cast iron skillit with baking paper and pour in the batter. Slice the remaining banana into pieces and gently press them into the top of the batter.
Place the skillet on the grill, close the lid, and bake the banana bread for about 50 minutes, or until golden brown and cooked through.
Remove the banana bread from the BBQ and immediately pour the maple syrup evenly over the top, allowing it to soak into the warm cake. Serve warm or let it cool before slicing.
Tip! Add some blueberries for a fresh touch.
